Apple Pancakes

Batter
2 tablespoons melted butter
4 eggs
1 cup milk
1 teaspoon vanilla
1/2 cup flour
1/2 teaspoon baking powder
1 tablespoon sugar
pinch of salt
1/8 teaspoon nutmeg
Blend all ingredients and let stand while you get the fruit filling ready and preheat oven to 425.

Fruit filling
4 tablespoons butter (I just use the rest of the stick: 6 tablespoons)
1/2 cup sugar
1/2 teaspoon cinnamon ( I use much more, up to a tablespoon)
1/8 teaspoon nutmeg
1 large apple sliced
Melt butter in 10 inch cast iron skillet. Add the remaining ingredients and saute apples for a few minutes until mixture bubbles.

Pour batter over the fruit filling mixture and bake at 425 for 15 minutes. Reduce heat to 375 for another 10 minutes. Top with powdered sugar and serve in skillet immediately out of oven.

I use the church's dried apples. I measure 2 cups and cover with water. I put in microwave for a minute and then just let them sit while I mix the batter. I drain them before I put them in the batter.

Biscuit Cheese Bread

1 pound sausage, bacon, or ham
2 rolls Pillsbury biscuits
2 cups grated cheese (any kind)
8 eggs, lightly whisked

Fry Meat, cool, and crumble. Cut biscuits into 4 pieces per biscuit; add biscuit pieces to egg, stir until covered. Add meat and cheese; stir into mix.

Pour into Pam sprayed Bundt pan (a loaf pan doesn’t work). Bake at 350 degrees for 35-45 minutes or until done. Serves 12-15. Can eat hot or good to make ahead and freeze. -Udell Smith

Cheese Balls

1 pound grated cheese
1 pound grated jack cheese
1 cup Ortega green chilis , chopped
½ cup chopped nuts

Mix all ingredients except nuts. Form into balls, 3-4 inches in diameter. Roll in chopped nuts. Refrigerate to store. Serve at room temperature. -Udell Smith

Whipped Potatoes

1 cup Margarine or Butter
1 - 8 oz. cream cheese
1 tsp. seasoning salt
1 tsp. salt
1 tsp. onion salt
1/2 tsp. pepper
5 ob cooked (boiled) potatoes - peeled

While hot put in mixer and whip.

Baked Beans

1 (1 lb. 15 oz.) can pork and beans
1/2 cup chili sauce
1/3 cup brown sugar
3 Tablespoon chopped onion
2 Tablespoons green pepper, chopped
1/2 tsp. salt
3 slices of bacon, cut in small pieces, ham can be used in place of bacon

Combine all ingredients. Bake at 350 degrees for 45 minutes in an uncovered dish.

Garlic Cheddar Chicken

Prep time: 15 minutes
Cook Time: 40 minutes
Ready in: 55 minutes
Yields: 8 servings

Ingredients:
1/2 cup butter
4 cloves garlic, minced
3/4 cup dry bread crumbs
1/2 cup freshly grated Parmesan cheese
1 1/2 cups shredded Cheddar cheese
1/4 teaspoon dried parsley
1/4 teaspoon dried oregano
1/4 teaspoon ground black pepper
1/8 teaspoon salt
8 skinless, boneless chicken breast halves - pounded thin

Directions:
1. Preheat oven to 350 degrees F (175 degrees C)
2. Melt the butter in a saucepan over low heat, and cook the garlic until tender, about 5 minutes.
3. In a shallow bowl, mix the bread crumbs, Parmesan cheese, Cheddar cheese, parsley, oregano, pepper, and salt.
4. Dip each chicken breast in the garlic butter to coat, then press into the bread crumb mixture. Arrange the coated chicken breasts in a 9X13 inch baking dish. Drizzle with any remaining butter and top with any remaining bread crumb mixture.
5. Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.

Poppy Seed Chicken

Ingredients:
4 Cooked Chicken Breasts (cubed)
1 small can cream of chicken soup
1 cup of Sour Cream
2 pkg. Ritz Crackers
1 stick of Butter or margarine
2 Tablespoons poppy seeds

Instructions:
Pre-heat oven to 350 degrees.
Cook Chicken let cool and cut up into 1/2 inch cubes. In a 9 X 13 pan, put chicken in the bottom of the pan add cream of chicken soup and sour cream. Stir around in the pan. Cook for 20 minutes. In another bowl crunch up the Ritz crackers and leave small pieces. Melt butter. In a bowl combine poppy seeds, crackers and melted butter. Mix and place over the hot creamy chicken. Cook 10 more min. until golden brown.

Rice Ground Beef Casserole

1 cup uncooked rice
1 can whole kernel corn
1/4 cup chopped onion
1 lb. ground beef
3 cans tomato sauce
1 2/3 cup water
1 tsp. Worcestershire sauce
1 or 2 cups grated cheese
1 small green chili pepper, chopped fine

Put into a 2 quart baking dish with tight fitting lid, rice, corn, salt and pepper to taste, onion, ground beef(uncooked broken into small pieces), tomato sauce, water, chili pepper, Worcestershire sauce. Mix up well and bake 1 1/2 hours at 350 degrees. Top with cheese and bake until cheese is melted and bubbly, about 10 or 12 minutes with lid off.

Mexican Casserole

1 clove Garlic, chopped
1 lb. hamburger

Brown meat, add onions and garlic. Drain off fat.

1 doz. tortillas
1 (no. 2) can tomatoes, mashed
2 (no. 2) cans kidney beans
1 (no. 2) can chile without beans
2 tsp. salt
1/2 tsp. pepper
1 tsp. chili pepper

Mix well. Put layers tortillas and a layer of meat topped with 1 cup cheese (grated). Bake 30-45 minutes at 350 degrees.

Taco Casserole Dish

1 pkg. Fritos corn chips
1 lb. ground beef (chuck)
1 can enchilada sauce
1 can tomato sauce or paste
1/4 lb. cheese, grated
1 small can chopped mushrooms
1 small can pitted olives
1 onion, chopped

Heat sauces, soften Fritos in it. Do not brown meat. Put ingredients in layers, starting and ending with the Fritos. Bake at 350 degrees for 60 minutes until bubbles appear on top.

Fresh Apple (Zucchini) Cake

Beat together:
2 eggs
1/2 cup oil
2 cup sugar
1 tsp. Vanilla
Mix well and add:
1/2 cup nuts or raisins
2 cup flour
1 tsp. baking soda
1 cup chopped zucchinni
2 tsp cinnamon
1 tsp. salt
Mix all together and bake in a greased 9x13 glass pan at 350 degrees for 1 hour.
Icing:
1 1/2 cup powder sugar
6 oz softened cream cheese
3 Tbls. Butter
3/4 tsp. vanilla
Cream together and frost cooled cake.

Zucchini Cobbler

Cut zucchini in 1/2 inch pieces
deseed and peel

Cook for 15 minutes:
10 cups sliced zucchini
1 cup lemon juice
Add:
1 1/2 cup sugar
2 tsp. cinnamon
1 tsp. nutmeg
Cook the mixure for 2 1/2 more minutes.
Place in bottom of a 9x13 pan.
Cobbler Mixture:
1 white or yellow cake mix
1 cube of butter
Mix this mixture together until crumbly.
Mix a handful together with the zucchini mixture
and place the rest on top.
Bake at 350 degree for 35 minutes
Top with ice cream or whipped cream

Zucchini Brownies

Cream together;
1 1/2 Cup sugar
1/2 Cup butter
Add
2 eggs
1 tsp. vanilla
2 cups flour
1/2 tsp. cinnamon
1 tsp. baking soda
2 Tbl cocoa
2 1/2 cup shredded zucchini
Mix well, place in a 9 x 13 greased pan and top with 1 cup chocolate chips & 1 Tbl. sugar

Bake at 350 degree for 25-30 minutes

Zucchini Cookies

Mix:
3 cup shredded zucchini
3 tsp. soda
1 1/2 cup butter
Add:
3 eggs
3 cup sugar
6 cup flour
3 tsp. cinnamon
3 tsp. nutmeg
1 1/2 tsp cloves
1 1/2 tsp salt

Mix well, Add 3 cups nuts and 3 cups raisins
Drop by spoonful on to greased cookie sheet.
Bake @ 375 degree for 12-15 minutes

Squeeze Fudge

3 oz cream cheese - room temp
1/2 cup butter - room temp
1 tsp. vanilla
1/3 cup cocoa
1 lb. powder sugar

Place all ingredients in a plastic zip lock bag. Squeeze and squish until fudge is creamy.

Cheese Cake

2 cups flour
1/2 cup sugar
2 tsp. grated lemon peel
1 cup butter or oleo
2 slightly beaten eggs
1/2 tsp. vanilla

Combine flour, sugar, and lemon peel. Cut in butter until mixture is crumbly. Add eggs and vanilla. Blend thoroughly. Pat 1/3 of dough on bottom of 12 inch spring pan, sides removed. Bake in hot oven, 400 degrees about 6 minutes or until golden brown. Pat remaining dough evenly on sides of a height of 2 inches. Butter sides of pan first, while bottom is cooling.

Filling:
6 (8 oz.) cream cheese
1/4 tsp. vanilla
3/4 tsp. grated lemon peel
1 3/4 cup sugar
3 Tbsp. flour
1/4 tsp. salt
5 eggs (1 cup)
2 egg yolks
1/4 cup heavy cream

Stir cream cheese to soften. Beat until fluffy. Add vanilla and peel. Mix sugar, flour, and salt; gradually blend into cream cheese. Fold in eggs and yolks, one at a time, beating well after each. Gently stir in cream. Turn into crust lined pan. Bake in very hot oven, 500 degrees, for 5-8 minutes or until top edge of crust is gold. Reduce oven heat to 200 degrees, bake 1 hour longer. Remove from oven in pan and about 3 hours later remove sides of pan. Glaze.

Strawberries Glaze:
2-3 cups fresh strawberries
1 cup water
1 1/2 Tbsp. cornstarch
1/2 to 3/4 cup sugar

Crush 1 cup berries and water and cook 2 minutes then pour through a sieve. Mix cornstarch with sugar, stir in hot berries. Bring to boiling, stirring constantly. Cook and stir until thick and clear. (Add red food coloring.) Cool to room temperature. Place remaining berries on top of cooled cheese cake circle with pineapple rings. Pour glaze over strawberries. Chill about 2 hours.

Pineapple Glaze:
Mix 3 Tbs. sugar and 1 Tbs. cornstarch, stir in 1 cup unsweetened pineapple juice. Add 1/2 tsp. grated lemon peel. Stir and boil until mixture thickens. Cool to room temperature. Trim cake with red pineapple rings, spoon on glaze. Chill 2 hours.

Layer Dream Dessert

Part 1:
1 cup flour
1 cube margarine
1 cup finely chopped nuts

Blend well and press into 9X13 inch pan and bake for 20 minutes at 350 degrees. Let cool.

Part 2:
1 8 oz. pkg. cream cheese
1 cup Cool Whip
1 cup powdered sugar

Mix well and pour into cooled crust.

Part 3:
1 pkg. instant chocolate pudding
1 pkg. vanilla instant pudding
3 cups milk

Beat until thickened and pour over top. With the remaining Cool Whip, spread evenly over top.

Steamed Persimmon Pudding

3 cups persimmon pulp
2 1/2 cups sugar
3 eggs
2 tsp. cinnamon
8 Tbs. butter
4 cups flour
6 1/2 tsp. baking soda (this IS right amount)
1/3 cup sweet milk
1 cup raisins
1 cup nuts

Add ingredients in order they are listed. Steam 2 hours. Put into 4 (number 2 1/2) cans, greased. Will be very dark when cooked. Stand cans on lids in large kettle with lid. Put water half way up on the cans. Pudding will rise 2 1/2 to 3 inches so leave room.

Sauce:
1 cup brown sugar
1/8 cube butter

Topping:
Mix 2 Tbs. cornstarch in sugar. 2 cups water or apple juice or cherry juice. If cherry or apple juice use 1/4 teaspoon almond flavoring, 1/4 teaspoon vanilla. Mix all together and cook 2 minutes.

Snickerdoodles

Mix thoroughly:
1 cup soft shortening, part butter
1 1/2 cup sugar
2 eggs

Sift together and stir in:
2 3/4 cup flour
2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt

Roll into balls the size of small walnuts. Roll in mixture of 2 Tablespoons sugar and 2 teaspoons cinnamon. Place 2 inches apart on ungreased baking sheet. Bake until lightly browned but still soft. (These cookies puff up at first, then flatten out.)

Bake at 400 degrees for 8-10 minutes. About 5 dozen 2 inch cookies.

Zucchini Cookies

Mix:
3 cups zucchini
3 tsp baking soda
1 1/2 cup margarine

Add:
3 eggs
3 cups sugar
6 cups flour
3 tsp cinnamon
3 tsp nutmeg
1 1/2 tsp cloves
1 1/2 salt

Mix well. Add:
3 cups nuts
3 cups raisins

Bake at 375 degrees for 12 to 15 minutes.
