Breadsticks

2 ¼ cups water
2 tablespoons yeast
1/3 cup sugar
1 tablespoon salt
1/3 cup oil
6 cups flour
Topping:
1 cube butter
1 teaspoon garlic salt
Salad supreme

Mix together and brush on top of breadsticks; sprinkle with parmesan cheese.
Let yeast dissolve in water 10 minutes. Mix all ingredients together. Mix every 10 minutes for 50 minutes. Roll out in rectangle and cut into breadsticks. Cover in topping. Bake at 350 degrees for 10 minutes. -Ladonna Counihan

Cowboy Caviar

2 tablespoons red wine vinegar
1 ½ teaspoons salad oil
1 ½ teaspoons hot sauce
1 clove minced garlic
1/8 teaspoon pepper
Salt to taste
1 can black eye peas
1 can shoe peg corn
1 can black beans
2/3 cup chopped cilantro
2 avocados, chopped
2-4 roma tomatoes, chopped
2/3 cup green onions

Whisk vinaigrette and add to the rest of the ingredients. Serve with tortilla chips. -Ladonna Counihan

Libby's Great Pumpkin Cookies

1 1/2 cup butter (softened)
2 cups brown sugar (packed)
1 egg
1 tsp. vanilla extract
1 16 oz. can solid packed pumpkin
4 cups flour
2 cups oats
2 tsp. baking soda
2 tsp. ground cinnamon
1 tsp. salt
Chocolate chips (can add if want to)

Preheat oven to 350. Combine flour, oats, baking soda, cinnamon and salt; set aside. Cream butter; gradually add sugars, beating until light and fluffy. Add eggs and vanilla; mix well. For each cookie, drop 1/4 cup dough onto lightly greased cookie sheet.
Bake at 350 for 20-25 minutes.

Spaghetti with tomato and mozzarella

1 lb spaghetti
8 oz fresh mozzarella, diced
1 T mint, chopped
2 lbs cherry tomatoes
2 T fresh basil, chopped
1/2 c olive oil
1-2 cloves of garlic, minced
salt

pepper

Cook pasta in boiling water until al dente. Drain and toss with tomatoes, mozzarella, basil, mint, garlic and oil. Season with salt and pepper. serve hot.
