Easy Gooey Brownies

2 c. sugar
1 t. vanilla
5 T. cocoa
1 1/2 c. flour
4 eggs
2 cubes melted butter

Mix all ingredients in mixer until smooth. Place in greased 13 x9 pan and bake for 25 minutes. DO NOT OVERBAKE.

Frosting
1/2 cube butter - melted 1 1/2 c. powdered sugar
1/8 c. cocoa 1/4 c. canned milk

Mix in mixer and spread over warm brownies.

Little Meat Loaves to Die For

1 1/2 lb. ground beef
2 T onion powder
3/4 c. oatmeal
1 egg
1 1/2 t. salt
3/4 c. milk
1/4 s. pepper
garlic to taste

Place all ingredients in blowl and mix with hands. In a 13 x 9 pan, make 6 mini meatloaves.

In a sauce pan place 2/3 c, ketchup, 2 T brown sugar and 2 T mustard, cook until sugar melts.

Place spoonful of sauce over each meatloaf until no sauce is left.
Cook in 350° oven for approximately 35 minutes.
These are most delicious!

Fudge Oatmeal Bars

The most requested recipe I have had when these were brought to a ward dinner!

1 c. brown sugar
1 c. white sugar
1 c. butter
2 eggs
1. t. soda
3 c. oatmeal
1 6 oz. package of chocolate chips
1 can sweetened condensed milk, such as Eagle Brand
1 1/2 c. flour
1/2 c. butter
1 t. vanilla

Mix sugars, butter and eggs until well blended in mixer. While mixing, slowly add dry ingredients. Take 2/3 of this mixture and press into 13 x 9 greased pan. Place the reamining ingredients in sauce pan over low heat and cook until chips and butter melt. Pour this sauce over mixture in pan. Dot with remaining mixture that was left from earlier. Cook in 350° oven for 25 minutes - do not over cook.

Chicken Enchiladas

1 sm. onion, chopped
1/2 clove garlic
Cook until tender in olive oil.

Then add 2 T flour, stir until mixed in with onion and garlic and add 1 can chicken broth, or 2 cups chicken bullion cook to thichen slightly.

Remove from heat and add 1 can diced green chiles and 2-4 cut up chicken breast.
Dip flour tortilla in mixture, then place spoonful of mixture in center of tortilla, roll up and place in greased 13 x 9 pan. Continue until all of mixture has been used. Sprinkle with cheese and place in 350° over and bake for 20 minutes.

BBQ Chicken Sandwiches

1 c. ketchup
1/2 c. maple syrup
2 T. mustard
2 T. Worcestershire Sauce
2 t. lemon juice
1/2 t. chili powder
1/2 t. garlic

Heat above until boiling and add 4 chopped chicken breast. Cook until chicken
is heated through. Place on sandwich rolls.
